Avocado slices, for serving Instructions for White Bean and Chicken Chili:1) Heat oil in a large pot. Add chicken and cook until browned, stirring occasionally, about 5 minutes. Add onion, bell pepper, garlic, cumin, chili powder, pepper, and salt; cook until onions are translucent, stirring, about 5 minutes.
2) Add broth, tomatoes, and beans; bring to a boil over high heat. Lower to a simmer and cook, covered, until chili has thickened, about 45 minutes. Stir in cilantro and serve warm. Top with a dollop of sour cream and a slice of avocado.
